House Warming Party

This past friday we were able to have a house warming party. We invited some friends from church and also some people from Matt's class. I made Chocolate Truffles, pinwheels, bacon- waterchestnut wraps, peanut butter chocolate fudge and these tomato cups. Everything turned out so well. By the way when making fugde if it tells you to use a wooden spoon you may want to listen. My experience resulted in a melted spoon... YIKES. I was pretty stressed out before since I got out of softball around 3 and still needed to go to the store. At 4 I began cooking and was able to get it all done in two hours! I was able to shower and get ready and finish cleaning a few other things. Here are a few pictures from the get together.

First of Many

My parents were able to come visit this past weekend and were here from Thursday until Tuesday! It was so great to have them in "our" city. We did so many fun things and got our apartment looking like a model home! I think I'll break this into a few posts so I don't get distracted writing down every little thing. So one of the things we always get to do with my parents when they visit is go out to eat. We took full advantage of this and enjoyed some trementous meals.

Of course we had to take them to Five Guys since they had never been. This is one of our favorite burger joints.



We went to Amagetti's at The Hill and had delicious sandwiches!




On the last night they were here they took us to Bacanas a Brazilian Rotizio Grill (pardon my spelling). It was really good and the service was great!




We also were able to enjoy P.F. Changs, Macaroni Grill and Chili's.

Trimester 1

Well Matt has done it! He survived the ASP (accelerated science program) and began Tri 1 today. Yesterday we went to his orientation. I had him dress nicely, he is in a doctoral program after all. There were a few others who had slacks, a button up and tie. I was slightly shocked that the majority of the students came in jeans, hoodies, beanies etc. When we first got there and picked up his packet with his schedule and other paper work we got a lot of comments from the faculty and staff members on the way he was dressed. It gave me a chance to later say I told you so since he was not to stoked about the idea of dressing up. Through out the whole day he received compliments and even though he didn't care much it made me happy.

It was great to see how excited he is about starting this program and being able to leave here in a few years with the knowledge he needs to help other people live healthy well lives. I also love the people in his class we have had time to get to know them during ASP and I look forward to the friendships we will be able to grow over the next 3 1/2 years.

Christmas Break Update

We decided to drive to Houston this year from Missouri. We left around 5am and got into Houston around 6pm. We only had to fill up three times! Amazing we love our new little car. The drive was easy and clear roads. We did have one scare though I was driving and going 12 over. As I came over the hill there was a cop and as soon as I went by him he turned on his lights. I thought I was done for and began to pull over. Thankfully he ended up pulling over the car behind me. Needless to say I was a little shaken up and light headed.

We spent Christmas Eve with the Theobalds at Zach and Jen's where we ate good food, read Luke 2 and played games. We stayed with my parents that night and they woke us up at 7am for Christmas morning.

We feel so incredibly blessed for all that we have been given and wonderful family members that help us out and bring such joy to our lives. We love our savior and all that he has given to us. This truly is a season for remembering him and the things he has done. Let us all try each day to be more like him and find ways to serve our fellow man.

Christmas In Old Saint Charles

This past Saturday we had the opportunity to go to Old Saint Charles with one of Matt's Paintball buddies and his family. We ate at R.T. Weilers and had some delicious Bison Burgers (Matt is in Love). Then we walk up and down the old cobble stone street going into a few of the shops along the way. It was a lot of fun but cold and wet. Not raining but misting. This is definitely a shopping area but to keep the kids entertained they hire theatre students from Lindenwood University to dress up as different characters including different Santas from around the world and from different time periods. They are really good at staying in Character and hand out cards for the kids to collect. We only got our picture with Serenity the Christmas Angel but we enjoyed the afternoon. I kept commenting to Matt that my mom and Tabatha would have had fun going through the shops

Early Bird Special

How could I forget the wonderful tradition of Black Friday. Yes we woke up early and braved the crowds... or what we though was going to be a crowd. Kohls was really the only stor I wanted to go to it opened at 4am and I knew Matt was not to stoked about the prospect of waking up before the sun and racing through the store to get the things on our (well my) list. We got to Kohls at 3:35am and to our suprise there were only about 20 people in line. I was pretty excited at this point thinking at least I dont have to beat up some granny to get my shower curtain. We did a really good job at sticking to our list and got in and out pretty quickly. We decided to stop by Walmart and pick up a few towels I had seen on sale and see if there were any good $2 DVDs. The DVDs were kind of a bust but we got some super nice towels out of it. The check out line was intense though! Yikes.

I am unsure if I will be able to get my sweet husband to go with me next year but he was sure a trooper and good sport about being "cart boy" for the morning. We were dont by 6:45am... Can't beat that.

SVU Softball 2006

While in Utah I was able to catch up with some of the girls I played softball with and my coach from Southern Virginia University. I had a blast catching up with them and reliving stories from the season. I sincerly miss these girls and hope that we can plan a reunion at some point in time for the whole team.
